I Love Baking

Oh how I miss baking things!!!  When we first got married, I really couldn't cook all that well.  After many calls to my mom, my dad, and my mother in law, I finally got to where I could cook something without totally burning down the house!  I really began by learning how to bake.  I love desserts!  I love making cakes, brownies and pies from scratch.  They really do taste better than from a box!  Since January, I have not baked anything.  It's not that I can't have it, it's just that I can't have it all.  I think if I made a cake I would eat. the. whole. thing.  The Weight Watcher's website had a recipe for Chocolate Souffle that I just had to try.  I found one similiar and took off making my first ever souffle.  I did have to buy some individual ramekins.  I found a set of four at Bed, Bath and Beyond for 7.99!  What a steal!  Here is the recipe:

Chocolate Souffle

Cooking Spray
4 1/2 tbsp of granulated sugar
1 tbsp all purpose flour
2 tbsp dutch process cocoa
2 tbsp 2% milk
1/4 tsp vanilla
1 large egg white
1 tsp powdered sugar

Preheat oven to 350 degrees.

Coat 2 ramekins (6oz) with cooking spray; sprinkle each with 3/4 tsp granulated sugar.  ( I really didn't care for this, I will probably not do this next time)

Combine 2 tbsp granulated sugar, flour, cocoa, and milk in a small saucepan over medium heat.  Cook for 2 minutes stirring until smooth.  Spoon chocolate mixture into a medium bowl, cool 4 to 5 minutes.  Stir in vanilla.

Place room temp egg white in a medium bowl, beat with a mixer at high speed until soft peaks form.  Add remaining 2 tbsp of granulated sugar, 1 tsp at a time, beating until stiff peaks form (be careful not to overbeat)  Gently stir 1/4 egg white mixture into chocolate mixture; gently fold in the remaining egg mixture.  Spoon mixture into prepared dishes.  Sharply tap  dishes two to three times to level.  Place dishes on a baking sheet, bake at 350 for 15 minutes or until fluffy and set.  Sprinkle each souffle with powdered sugar and eat immediately.  Calories:  170

I didn't have dutch processed cocoa so I just used normal cocoa and it turned out ok.  These fall really fast so you really have to eat them quickly.  They were so good and light.  I hope you enjoy!  If you make something that I list, please leave a comment!  I would love to hear if you liked it or did something to change it!
